This delicious dressing is ideal to serve with light combination meals  that combine e.g lentils, butterbeans, chick peas, or brown and wild rice with vegetables, roast vegetables or leftover chicken or fish.

Ingredients

¼ cup (63ml) olive oil

2 Tbsp. (30ml) white wine vinegar

1 Tbsp. (15ml) honey

Variations: Select one of the following to add to recipe:

2 Tbsp. (30ml) French mustard/Dijon mustard

2 Tbsp. (30ml) tomato relish

2 Tbsp. (30ml) atchar

2 Tbsp. (30ml) curry paste

Method

  1. Mix all ingredients together in a screw top bottle and shake well.
  2. Serve with couscous, buckwheat, pasta, rice, potato, roast vegetable or green salad
