Broccoli Soup

Ingredients

2 Large Heads of Broccoli (Cut into even sized pieces – stems and all) or a large packet of fresh cut broccoli Florets (700g)

1000 ml Boiling water or quality chicken stock (which should also be boiling)

½ tin Reduced Fat Coconut Milk

1 Tablespoon Thai Green Curry

1 Large clove of garlic crushed

1 cm piece of ginger grated

1 Large Onion

1 Tablespoon of Olive oil

Salt to taste (approximately 2 teaspoons per litre of water. Less if you are using chicken stock)

Method

Stir fry the onion in the olive oil and Thai Green Curry for about 5 minutes. Now add the crushed garlic and ginger and 1 cup of the chicken stock. Bring to the boil. Add the broccoli and steam the broccoli till it is just starting to become bright green. Remove the pot from the heat and ad the rest of the chicken stock and coconut milk. Decant the broccoli and liquid into another container or food processing jug and blend till smooth.
